Humanity has worked hard to select staple grains that are rich in essential amino acids, high in protein mass, and "unwearable" to support life, resulting in wheat and rice becoming the world's main food crop.

Wheat, on the other hand, contains all essential amino acids, but the proportion is not high, and the total protein mass is rather large. In general, the wheat culture is an area where the population density is not extremely high and the grasslands are combined, so we solved this problem by supplementing milk, eggs, and meat through dairy. Animal protein has a very high percentage of essential amino acids, so if you eat animal protein together in wheat dishes and increase the total protein mass, the average intake of essential amino acids before modern times can be quite good, so even if the intake of animal protein itself is not that high, the average value of essential amino acids can be quite good.

Rice, on the other hand, has a very good percentage of essential amino acids, but the total amount of protein is much lower than that of wheat. Therefore, amino acid deficiency does not occur just by eating rice, and protein consumed by rice is quite efficient, but the total amount itself is low to consume all the necessary proteins only with rice. However, the problem in the rice culture area is that the population density was very high thanks to the enormous population support power of ordinary rice. In this case, there will inevitably be a problem with the supply of sufficient additional protein.

But in the rice culture, there were two solutions,

The first is a variety of legumes. Beans have an abundant percentage of essential amino acids that do not fall behind milk or meat except for their lack of iron and calcium, and they have an effect of fertilizing the land, making them a very suitable crop for turning. A variety of pastes and soybean dishes using beans were very good for adding protein to rice.

The second was the use of cattle in a variety of ways. In India, cattle were protected religiously and culturally to increase the number of cattle, but beef use was severely restricted, allowing naturally dead cattle to keep the number of cattle high enough to consume in a low caste, and at the same time, dairy products could be used in a variety of dishes, such as East Asian pastes, to supply protein and minerals.

In South Korea and southern China, cattle were actively used for farming while making it impossible to catch cattle, and both countries relied on cattle for the labor force of paddy farming, and the number of cattle raised itself was very large, so even if the number of cattle caught was limited, the supply and consumption of beef were quite good.

In the pre-modern era, it was meaningful to increase crop productivity and make a crop with good protein mass, but in modern times, the taste of rice comes from the sweet taste of rice due to the high starch content, and the higher the protein mass, the worse the taste of rice + Protein is no longer a valuable nutrient for modern people, so they supplement every meal, whether it be meat, milk or seafood, so the improvement of rice varieties is rather low in protein content in modern times.

Rather, low-improvement ancient varieties with high fiber and protein content are sometimes cultivated as crops for special purposes such as diabetics.
